This is easy to make and delicious, used as a breakfast coffeecake, snack or even a dessert. You’ll never know that is made from boxed cornbread.Ingredients
1 Box of Cornbread mix (I use Krusteaz Honey Cornbread, fat-free, but any regular size box will work.)
1 cup raspberries, fresh or frozen Finely grated rind from one orange
1/4 cup of almonds (I used almonds with orange flavor)Directions
Prepare one box of cornbread following directions but use orange juice instead of water
Add to batter: raspberries, orange rind and 2/3 of the almonds
Mix, pour into 8 x 8 or 9 x 9 pan.
Sprinkle top with the other 1/3 almonds.
Bake using the directions on the cornbread box.
